Vodka and Mint Gimlets

My mint is getting wildly out of control. My guess is that it's having its last hurrah. Because the forecast says the low for next Thursday is 46. 46 people... why!? I don't want a pumpkin spice latte nor do I want to wear a sweater. Or boots. Because the boots will be permanently attached to my feet from October to May. So I'd rather not. K? K.

In the spirit of summer and my mint, I whipped up these mint gimlets. We sat on the porch and drank them. They are so refreshing and delicious. I made them with a sugar substitute because I'm seriously watching my consumption. I didn't even notice. They're so darn good.

The secret is mint hitting your taste buds in all ways. Mint infused simple syrup, muddled mint, and a sprig for garish. So so good. So so good I drank two. Hence the so being used twice. Now I'm getting ridiculous. 

Vodka + Mint Gimlets


vodka (ketel one's my fave)




lime juice, freshly squeezed

crushed ice

seltzer water



This recipe makes one large or two smaller drinks. 

The amount of seltzer added is up to you.

You can even omit it, it you don't want fizz.


first make the simple syrup using a 1:1 ratio of sugar and water, heating them up on the stove until dissolved.

add about 1/4 cup of mint leaves to the syrup and let steep for 5 minutes. discard leaves. the syrup will keep in an airtight container in the fridge for a few weeks. 

in a serving glass, muddle some mint, about 5 leaves. top with crushed ice.

in a cocktail shaker filled with ice, measure out 3 oz. vodka, 2 oz. mint simple syrup, and 2 oz. freshly squeezed lime juice. shake for 30 seconds. 

pour mix over muddled mint and ice then top with seltzer.

serve with a sprig of mint for garnish.
